I have written about Mac and Cheese before. It is a staple in many young children households and usually comes in a blue box. This is a terribly unhealthy method for our children to devour this yummy macaroni treat. My last recipe included winter squash, if you are still eating dairy this is still a good method. It uses less then half of the cheese then full-fat mac and cheese. I have been looking for a good recipe for this common lunch staple that is vegan. It took a while but I have found one, The Engine 2 diet has one.

In the recipe it calls for roasted red pepper, we did not have any (and when you buy them you want them in water, not oil) I subbed in winter squash instead, 1/2 -2/3 cup.
